Mustards are part of the Brassicaceae family and were one of the first plants to be cultivated. Their seeds are one of the oldest spices known, with over 5000 years of use and cultivation. There are about 40 different mustard plant species, but three are the most common for culinary use: black, brown, and white mustard seeds are commonly used in recipes and to make mustard.
Brown mustard seeds are used in Europe to produce Dijon mustard and other specialty mustards, and the usual table mustard in Russia is made from brown mustard seeds. In Asian countries, brown mustard seeds are used to produce condiments and mustard oil. White mustard seeds are ground to make a yellow mustard condiment.
Mustard seeds are used as a spice in prominent dishes around Asia and Europe, and are also added to the Italian condiment “mostarda,” where they are mixed with fruits, sugar and other ingredients. As for their medicinal purposes, mustard seeds were used extensively in Ayurvedic medicine because of their potential to heal the bronchial system, eliminate intestinal parasites, and ease sprains and other pains
